Engineering a perfect DESSERT

“This recipe has fond memories. It is a recipe from Portugal that my Vovo (grandmother) used to make when I was a child.

INGREDIENTS:

3 cups of water

1 tsp of salt

1 lemon peel chopped fine. Remove as much of the white inside as possible

2 cups of white rice

4 cups of hot milk

2 cups of sugar

4 whisked egg yolks

1 tbsp of butter

 

INSTRUCTIONS:

Bring water, lemon rind and salt to a boil.

Add rice and bring it back to a boil.

Reduce to a simmer for 10 minutes until the water is absorbed.

While stirring, slowly add hot milk.

Let the rice cook for 25-30 minutes on low heat. Stir frequently.

Add sugar and stir.

Pour egg yolks into the pot through a strainer and stir well.

Stir in the butter.

Remove pot from heat and let it sit for 10 minutes.

Serve with raisins if desired and sprinkle cinnamon in a design of your choice (does not have to be our Hallam logo 😊).
